September - Breakfast

  1. I made Mini Sun-Dried Tomato Cream Cheese Roll-ups. These are super easy. I don't whip up a formal recipe, I just eye-ball it... but it probably comes out about like this:

    8 oz. cream cheese softened
    1/4 cup sun-dried tomatoes drained, rinsed, and diced
    Tortillas

    Mix the cream cheese and sun-dried tomatoes with a fork until well mixed. Spread cream cheese mixture on tortillas to taste. Serve warm or cold. Enjoy!

  3. Breakfast Casserole:

    4 slices bread, torn
    1 lb bulk sausage, or you can cut up the links
    1 C grated cheese
    6 eggs
    2 C Milk
    1 tsp dry mustard (optional)
    1 tsp salt
    1 dash pepper

    Preheat oven toe 350 degrees. Grease 9x13 dish. Layer torn bread in dish. Brow the sausage and drain. Spoon sausage over the bread. Sprinkle on cheese. Beat eggs and add last 4 indredients to the eggs. Pour egg mixture over top of bread, sausage and cheese. Bake for 35-40 mins.

    **You can also make this the night before and keep it in the fridge until morning.
    **Tip: Most ovens have a delay start timer. If you set this up the night before, your oven can be preheated when you get out of bed, so that all you have to do is pop the casserole in the oven, because it's already preheated! This will save you a little bit of time in the morning! And if you're like me...every minute counts in the morning!!
